Toasted Coconut Almond Granola is by far the most delicious easy homemade granola recipe. You probably already have everything you need to make it on hand in the pantry, and it only takes about 15 minutes to make. You won’t even think about buying store-bought granola again after you’ve tried this recipe. The best part is your whole house will smell amazing while you make the best granola!

Homemade granola is delicious any time of the year and keeps in the pantry for months. Having a big batch of healthy granola on hand in the pantry makes breakfast and snacks so easy.

Ingredients:
- Old fashioned oats
- Whole almonds
- Sea salt
- Brown sugar
- Honey
- Coconut oil
- Pure vanilla extract
- Almond extract

Instructions
- Preheat oven to 350°.
- Chop or use a food processor to pulse the almonds until they are coarsely chopped.
- In a large bowl combine almonds, oats, sea salt, and brown sugar and stir to combine.
- In a microwave-safe measuring cup or small bowl combine honey and coconut oil. Microwave for 40-50 seconds.
- Stir to dissolve the melted coconut oil, and add pure vanilla extract and almond extract.
- Pour the wet ingredients immediately over the dry ingredients to coat them evenly.
- Pour the oat mixture evenly onto a large parchment-lined baking sheet with sides.
- Bake for 5 minutes then flip or stir the toasted oats.
- Spread the granola mixture back out into an even layer and return them to the oven and bake for another 5 minutes. Oats will be golden brown on the edges when they are done.
- Remove and let the granola cool completely.
- Once cooled to room temperature granola clusters can be broken apart and eaten immediately.
- Store crunchy clusters in an airtight container like this one.

Variations
- Different spices – at the 5-minute mark sprinkle the granola with a little bit of cinnamon or pumpkin spice for a fall twist.
- Deluxe – add chia seeds, pumpkin seeds, or dried fruit after baking.
- Kid-friendly – add golden raisins & a dash of cinnamon sugar for some extra sweetness.

Making your own granola is great for an inexpensive breakfast and makes a great snack as well. Our house enjoys making this recipe year-round with Instant Pot Greek yogurt and fresh or frozen berries.

- Serve on top of yogurt and fresh fruit
- Add to a smoothie bowl with unsweetened coconut flakes
- Eat it like cereal with almond milk and dried blueberries.

Equipment
To make this you will need a large sheet pan like this one. The bigger the sheet pan the better in my opinion, because the more you can spread out the oats the more toasted they can get when you bake them.
You’ll also need to line the sheet pan with parchment paper. This keeps everything from sticking but also is helpful when removing the crunchy granola from the sheet pan to the storage container.
Storage
If the granola doesn’t disappear before your eyes you’ll need to store it in an air-tight container. I like using my mason jars with these lids and these are my favorite pantry storage containers. I’ve used both to store my go-to granola recipe and have had great results with it staying fresh for months, either way, I store it.
Can You Freeze Granola
Yes! You can freeze granola. For the longest life, I recommend vacuum sealing it with a food saver for up to 6 months. You can also place granola in ziplock freezer bags or Tupperware for up to three months. Freezing granola may affect the crunchy texture of the granola and it may not be as crispy when it’s defrosted. To defrost set the granola out on the counter for 10-15 minutes.
Top Tip
The first time you make this recipe watch it closely so that you don’t overbake it and possibly burn the granola. Cooking times and temperatures may vary by appliance and ingredients used.

Store homemade granola in an air-tight container in the pantry for one to two months or in the freezer for up to 6 months.
1. Toss together all of the ingredients together and stir with a rubber spatula to combine.
2. Pour out the oat mixture onto parchment lined baking sheet
3. Bake at 350° for 5 minutes then carefully turn once.
4. Bake for 5 more minutes
5. Remove the baking sheet and allow to cool completely
6. Store in an air-tight container
Store cooled granola in a large mason jar with a tight-fitting lid for up to two months.
