What Are Wheat Berries

Once cooked, wheat berries can be used in grain salads, soups, breakfast bowls, or dried and milled into whole wheat flour.
Why the Instant Pot Is the Top Method
Using a pressure cooker for cooking wheat berries is the top method because it dramatically reduces the cooking time and creates consistent results. Unlike a slow cooker or stovetop method, the Instant Pot uses high pressure to soften the grains evenly. This makes pressure-cooker wheat berries tender without becoming mushy.

1 cup wheat berries
2.5-3 cups water or chicken broth
Pinch of salt optional
How to Cook Wheat Berries in the Instant Pot
Rinse the wheat berries under cold water to remove any dust or debris. Add the wheat berries and cups of water to the Instant Pot. Add salt if desired. Secure the lid and set the valve to sealing. Cook on high pressure for 30 minutes. Allow a natural release for 10 to 15 minutes, then carefully perform a quick release if needed. Drain any excess water/broth and fluff with a fork.
Cooking Time and Texture
The average cook time for wheat berries is about 30 minutes, depending on the variety. Hard red and hard white wheat berries usually take the full time, while softer varieties may finish slightly sooner. The finished grain should be tender with a chewy texture. If you prefer softer grains, you can increase the cooking time by a few minutes.
Cooking Wheat Berries in Chicken Broth
Wheat berries can also be cooked in chicken broth instead of water for extra flavor. This is a great option if you plan to use them in savory dishes or as a side dish.
