Mexican Stuffed Pepper Casserole

You Will Need:

– Extra virgin olive oil – TCC ground beef – Diced bell peppers – Diced jalapeno  – Red onion, chopped – Minced garlic – Diced tomatoes – Beef broth  – Worcestershire sauce – Shredded cheese – Jasmine rice (uncooked) · – chili powder – cumin – garlic powder – onion powder – Black Pepper – Salt

Pre heat the oven, add EVOO to a large Dutch oven & brown the ground beef. Add the fresh chopped veggies.

Brown The Meat


Season with the spice blend and stir to combine the ingredients.



Turn the heat to medium-low and add the uncooked jasmine rice to the skillet.

Uncooked Rice

Pour in the beef broth and stir to combine. Heat the mixture over medium heat for 3 more minutes stirring as needed.

Add Broth


Bake for 20-25 minutes or until the rice is cooked, and the liquid has been absorbed. Remove the casserole from the oven and sprinkle the shredded cheese over the top.


Store leftovers in an air-tight container for up to 3 days, Re heat in a microwave-safe dish for 1-2 minutes.
