Easy Instant Pot Cilantro Lime Rice is the perfect side dish for any Mexican food recipe. Make cilantro-lime rice in under 20 minutes without babysitting boiling pots on the stovetop.

This recipe was inspired by the blog post How to Make Instant Pot Rice and it pairs perfectly with Air Fried Fish Stick Tacos, Instant Pot Pork Carnitas, or Instant Pot Green Chili Chicken Enchiladas.
Ingredients
- Long Grain White Rice (Jasmine, Basmati)
- Water
- Lime Juice
- Fresh or Frozen Cilantro
- Extra Virgin Olive Oil
- Sea Salt

Instructions

- Measure out dry rice, and rinse under cold running water.
- Dump rinsed rice directly into the inner pot in the Instant Pot.
- Using a measuring cup, measure out equal amounts of water or broth and add it to the Instant Pot.
- Easily scale this recipe up or down using a 1:1 ratio of rice to water.
- Add sea salt, lime juice, EVOO and chopped fresh cilantro to the pot.

- Remember not to go past the halfway mark on the inner pot.
- Lock the lid in place with the vent knob turned to the sealing position.
- Turn off the “Keep Warm” setting to ensure you don’t overcook the rice.
- Select pressure cook or manual and set the cook time to 2 minutes.
- Allow for the pressure to naturally release (NPR) for 15 miutes before releasing the remaining pressure.
- When the float pin has dropped it is safe to remove the lid and fluff the rice with a fork before serving.

Store leftover cilantro lime rice in an air-tight container for up to 3 days. Leftover rice is perfect to combine with Instant Pot Chicken Taco Meat for an easy burrito bowl.
Top tip
Turning off the “keep warm” setting when making rice in the Instant Pot will ensure your rice does not keep cooking and get overcooked and mushy.

- 1.5 Cups Long Grain White Rice (I prefer Jasmine but Basmati works well too)
- 1.5 Cups of Water
- ¼ Cup Lime Juice (juice of 1 fresh lime)
- ½ Cup Fresh cilantro chopped
- 1 Tbsp. Extra Virgin Olive Oil
- ¼ tsp. Sea Salt

Notes
1.5 cups of dry rice equals 3 cups of cooked rice.
Rinsing the rice before pressure cooking is a very important step to ensure the rice turns out, don't skip this step!

This function is specifically for cooking white or parboiled rice. The preset cooking time can’t be changed so these functions can’t be used with other varieties of rice but if white rice is your go-to then give it a whirl.
For any type of white rice basmati, Jasmine, long grain, short grain, etc. use a 1:1 ratio meaning 1-part rice to an equal amount of liquid.
For brown rice varieties, jasmine or basmati it needs a tad bit more water, so stick to a 1:1.25 meaning 1 cup of brown rice to 1 and ¼ cups of water or broth.
When referring to making rice in the Instant Pot, use the measuring cup that came with the Instant Pot. This cup isn’t an actual “cup” in measurements it’s ¾ cups. So, keep in mind when using it that if you start with ¾ cup of dry rice you will get 1 ½ cups of cooked rice. The ratio of dry to cooked is 1:2 meaning if you start with 1 cup of dry rice you get 2 cups of cooked rice.
