    Healthy Burrito Bowl Recipe (Banza Tomato Chipotle Rice)

    If you love Banza chickpea pasta I know you will LOVE Banza's chickpea rice. Try out this easy burrito bowl recipe made with tomato chipotle rice. It's so delicious and it cooks in 4 minutes! It's the perfect healthy 30-minute meal for busy families I bet your family won't even know you snuck in a little extra protein. This chickpea rice is a great option if you are looking for rice alternatives or just trying to make healthy swaps in your diet.

    Banza chickpea pasta is so delicious I knew I had to try the new product when I first saw it, and it did not disappoint! This new rice comes in three flavors. For this easy rice bowl recipe, I'm using Chipotle Tomato flavor, but they also make Garlic Olive Oil, and Plain flavor rice.

    Ingredients

    • Cubed Chicken Breast
    • EVOO
    • Garlic Powder
    • Onion Powder
    • Chili Powder
    • Ground Cumin
    • Sea Salt
    • Black Pepper
    • 1 7oz Bag Banza Chiptole Tomato Rice
    • 1 Can of Black Beans
    • 1 Cup of frozen corn
    • Tomato Diced
    • Shredded Cheese
    • Cilantro
    • Salsa
    • Sour Cream

    Instructions

    To start heat up a cast iron grill or skillet on medium heat. Lightly spray with EVOO. Season chicken breast with garlic powder, onion powder, chili powder, ground cumin, salt, and pepper. Grill/cook chicken breast until internal temperature reaches 165°.

    For faster meal prep cut the chicken into 1-inch cubes. When the oil is hot in the skillet add cubed chicken and cook for 8-10 minutes or until it's fully cooked on all sides. Season chicken with garlic powder, onion powder, chili powder, ground cumin, salt, and pepper, and toss to coat with seasonings evenly.

    Next prepare the Banza chickpea rice per the package instructions:

    In a medium-sized saucepan bring 6 cups of water to a boil. Reduce the heat to a simmer and add the rice. Simmer the rice for 4 minutes watching closely so the water and foam do not boil over. Remove from the heat and strain in a fine mesh strainer. DO NOT RINSE. Return the rice to the pot, add butter or EVOO and seasoning packet, and stir to combine. Cover and let sit for 2-3 minutes before serving.

    While the Banza rice is cooking rinse and drain the black beans and combine them with the frozen corn. Heat them over low heat for about 5 minutes or until they are warmed through.

    Lastly, assemble burrito bowls. Spoon Banza tomato chipotle rice into a bowl and add the black beans, corn, and seasoned chicken. Top your burrito bowl with shredded cheese, salsa, sour cream, fresh sliced avocado, diced tomato, and fresh cilantro.

    Hint: If you like to meal prep reduce the cooking time to 3 minutes and toss it with a little bit of olive oil before storing it in an air-tight container.

    Why Eat Banza Rice?

    Substitutions

    • Plain Rice - instead of Chipotle Tomato try plain Banza Rice.
    • Shrimp - Swap out the chicken for a sauteed and seasoned grilled shrimp.
    • Vegetarian - serve with your favorite plant-based protein on top.

    Variations

    • Spicy - add a dash of smoked paprika for a bit of heat
    • Deluxe - add cotija cheese crumbles on top for an even fancier taco bowl.
    • Kid-friendly -wrap it all up in a tortilla for an even easier stuffed burrito.

    Equipment

    I love cooking in my large cast iron skillet and a taller sauce pan comes in handy when preparing Banza rice so that the foamy water does not boil over onto the stovetop.

    Storage

    Store leftover ingredients in an air-tight container for up to three days. To reheat place in a microwave-safe dish and heat for 1-2 minutes or until the food is thoroughly warmed through.

    Top tip

    Use a digital meat thermometer to ensure you are cooking the chicken to an internal temperature of 165° and to avoid overcooking it and causing it to become dry.

    Notes

    Hint: If you like to meal prep reduce the cooking of the Banza rice time to 3 minutes and toss it with a little bit of olive oil before storing it in an air-tight container and pre-cook chicken and re heat to serve.

    Is Banza rice gluten-free?

    Yes, according to Banza their chickpea rice is certified gluten-free but is packaged in a facility that also processes gluten-containing products.

    How to cook Banza rice.
