Ingredients

For the Casserole:
- Extra virgin olive oil
- TCC ground beef (shop here)
- Diced bell peppers (a mix of red, green, and yellow for vibrant colors)
- Diced jalapeno (cleaned and deseeded) optional
- Red onion, chopped
- Minced garlic
- Diced tomatoes
- Beef broth (you can substitute with vegetable broth or better than bullion)
- Worcestershire sauce
- Shredded cheese
- Jasmine rice (uncooked)
For the Spice Blend:
- chili powder
- cumin
- garlic powder
- onion powder
- Black Pepper
- salt

Instructions
This recipe comes together easily with fresh garden produce, TCC ground beef, Jasmine rice, spices, pantry staples and cheese.

Brown the ground beef and add the fresh chopped veggies.

Season and stir to combine.

Add the uncooked rinsed rice.

Pour in the broth and stir to combine.
Instructions
Preheat your oven to 350° (176° C).
- In a small bowl, mix together all the spices listed for the spice mix. Set this aside for later.
- Heat a 6-quart Dutch oven like this or a cast iron pan like this over medium-high heat. Add the olive oil and allow it to heat for a a few minutes.
- Add to the skillet, the ground beef, and break it apart with a wooden spatula. Cook until most of the pink is gone, breaking it into small crumbles as it cooks. Drain any excess fat if necessary.
- Add the diced bell peppers, minced garlic, diced tomatoes, and chopped red onion to the skillet. Sauté them for about 3-5 minutes until they start to soften.
- Sprinkle the spice mix evenly over the meat and vegetables. Stir well to coat everything in those delicious flavors.
- Turn the heat to medium-low and add the uncooked jasmine rice to the skillet.
- Pour in the beef broth and Worcestershire sauce and stir to combine.
- Heat the mixture over medium heat for 3 more minutes stirring as needed.
- Cover the skillet with a lid or aluminum foil and place it in the preheated oven.
- Bake for 20-25 minutes or until the rice is cooked, and the liquid has been absorbed.
- If the rice is still crunchy add a few tablespoons of water and return to the oven for 5 additional minutes.
- Remove the casserole from the oven and sprinkle the shredded cheese over the top.
- Return the casserole uncovered to the oven for an additional 3-5 minutes, or until the cheese is melted and bubbly.
- Once done, remove it from the oven and let it cool for a few minutes before serving.
- Top with chopped fresh cilantro or parsley if desired.
Tip: be sure to thoroughly rinse your rice in a metal colander until the water runs clear. This removes any impurities and removes some of the starch that causes the rice to be clumpy and sticky.

Substitutions
- Jasmin Rice - Brown rice could be substituted for white rice however the baking time will increase significantly.
- Mexican Spice Blend - use your favorite Italian seasoning instead for a totally different flavor profile.
- Sharp Cheddar Cheese - Substitute for Monetary Jack, Colby Jack, or a blend of your favorite shredded cheeses.
- Uncooked Rice- To cut your dinner prep time down use pre-cooked rice and bake for 12-15 minutes before adding cheese and heat through until casserole is hot and cheese is melted.
This recipe is naturally Gluten-Free, however, check that your brand of Worcestershire sauce is GF if using.
Variations
- Spicy - Add the diced jalapeno and reserve a few seeds or add a few red pepper flakes for a spicy version.
- Low Carb - use cauliflower rice instead of Jasmine rice and reduce the baking time to 12-15 minutes.
- Kid-friendly - Green bell peppers can be somewhat bitter, consider using red, yellow, or orange peppers that are sweeter and more kid-friendly.

Equipment
Using a 6-quart cast iron Dutch oven is perfect for this meal. I have this Le Creuset version as well as a more economical version from Lodge. If you don't yet have a Dutch oven you can use a large cast iron skillet or transfer the unstuffed pepper ingredients to an oven safe dish with a lid like this before placing the casserole in the oven.
Storage
Store leftovers in an air-tight container for up to 3 days, or freeze in individual portions in Souper Cubes for future lunches or quick dinners for up to 3 months. Re-heat in a microwave-safe dish for 1-2 minutes.

This looks like a very easy and delicious meal! However, I like green bell peppers in this meal, so is it okay if I use jus green bell peppers? Plus, I since this is a casserole, can I use a casserole pan instead of the cast iron skillet? Just letting you know that the meal looks great and delicious!

Hi Patrice, You can certainly use green bell peppers for this recipe. I just used what I had fresh on hand from the garden. Also, you can bake this in a casserole pan I prefer to use the cast iron skillet so that I can brown the TCC ground beef right in the same pan and add the ingredients all to the same skillet saving me on dishes!
