Gluten-Free coconut shrimp in the air fryer
I didn’t intend for this recipe to be gluten-free but the flavor of coconut flour complemented the unsweetened coconut and the crispy panko breadcrumbs so well that I preferred using coconut flour over all-purpose flour. Healthy ingredient swaps that enhance the flavor of the recipe and make it better for you are the perfect combination. Air frying is another healthy cooking tip, by spraying the coconut shrimp with avocado or olive oil and air frying instead of deep frying you can significantly reduce the calories and oil needed to reach a crispy “fried” texture.
Ingredients:
- Unsweetened shredded coconut
- Panko (or keto breadcrumbs for low-carb)
- Coconut flour
- 15-18 Extra large Shrimp deveined, peeled, and tails removed
- 3-4 Large eggs
- Sea salt
- Black pepper
- Avocado oil or EVOO spray

Two-Ingredient Dipping Sauce
- Pineapple Apricot Jam
- Sriracha hot sauce

Air Fry Range
This recipe is specifically intended for full-size ovens with the air fry feature like the Frigidaire Air Fry Range I own. The cook times and temperatures for the range with air fry may vary from smaller countertop air fryers. Follow the recipes below for complete instructions. Directions
To start preheat the oven using the air fry function to 350° and remove the Ready Cook Air Fry Tray and cookie sheet drip pan from the oven. Line the sheet pan with heavy-duty aluminum foil and place the air fry tray on top. Be sure the drip pan you are using is this size to avoid oil and food debris from dripping on the bottom of the oven. Spray or brush the air fry tray with avocado oil.
Next, peel, devein, and remove the tails of the shrimp and rinse under cold water. Strain and place shrimp in a medium-sized mixing bowl. Combine the crack 1 large egg and add it to the shrimp and stir to combine and coat the shrimp.
In a shallow dish good for dredging add panko, coconut flour shredded coconut salt, and pepper. Stir with a fork to combine. In a separate dredging, dish crack 2 more large eggs and whisk with a fork until yolks and whites are combined. Working with one or two shrimp at a time dip them in the dry ingredients lightly coating all sides. Next, dip the shrimp in the dish with the eggs to coat and then place the shrimp back into the dry ingredients pressing the shrimp into the dry mixture and coating the shrimp with a thick layer of the coconut mixture. Place the shrimp on the oiled air fry basket one by one. Repeat these steps until all the shrimp have been fully coated.
Be sure not to overcrowd the air fry tray to allow air to flow around the shrimp. Spray each shrimp with Avocado oil. Place Ready Cook Air Fry Tray in the oven in the third position with a foil-lined baking sheet on the rack directly below.
Air Fry at 350° for 8-9 minutes, or until shrimp is fully cooked and crispy.




Coconut shrimp dipping sauce

To make a quick dipping sauce combine your favorite preserves with a little bit of sriracha chili sauce. We prefer apricot or apricot-pineapple preserves for this sauce but you could substitute orange, pineapple, or peach preserves if you prefer. I recommend adding a little bit of sriracha chili sauce at a time to reach your desired flavor and spice.

Frigidaire Air Fried Shrimp & Dipping Sauce
Keto and Gluten-Free Air Fried Shrimp made in the Frigidaire Air Fry Range with the perfect dipping sauce on the side.
Ingredients
- 15-18 Extra large Shrimp deveined, peeled and tails removed
- 3-4 Large eggs
- 1 Cup Organic Coconut shredded & unsweetened
- 1 Cup Panko breadcrumbs
- ¼ Cup coconut flour
- 1 tsp. Black pepper
- ½ tsp. Sea salt
- Extra virgin olive oil spray
Dipping Sauce
- Coconut Shrimp Dipping Sauce
- ⅓ Cup Apricot Pineapple preserves
- 1 tsp. or less Siracha chili sauce
Instructions
- Spray or brush EVOO al over the Ready Cook Air Fry Tray/Basket
- Preheat Range to 350° on the Air Fry function
- Thaw and prepare the shrimp. Peel devein and remove tails
- Rinse the shrimp under cold water then strain and remove to a small mixing bowl
- Crack 1 large egg and add it to the shrimp and stir to combine and coat the shrimp
- In a shallow dish good for dredging add panko, coconut flour shredded coconut salt, and pepper. Stir with a fork to combine
- In a separate dredging, dish crack 2 more large eggs and whisk with a fork until yolks and whites are combined

- Pressing the shrimp into the dry mixture and coat the shrimp with a thick layer of the coconut mixture.
- Place the shrimp on the oiled air fry basket one by one
- Repeat these steps until all the shrimp have been fully coated
- Be sure not to overcrowd the air fry tray to allow air to flow around the shrimp
- Spray each shrimp with EVOO spray
- Place Ready Cook Air Fry Tray in the oven in the third position with a foil-lined baking sheet on the rack directly below
- Air Fry for 8 minutes or until shrimp are crispy and cooked through
- While the shrimp are air frying mix up the preserves and sriracha for a simple dipping sauce.
Notes
If the dredging bowls begin to get messy during the coating process, empty them out and add new ingredients. Keep an extra egg or two on hand if needed to refill the dredging bowl.
Keto recipe substitution use pork rhine bread or keto breadcrumbs if needed.

Keto Coconut Shrimp
To keep this recipe low-carb and Keto friendly you can use fewer panko bread crumbs. One-quarter cup of panko has about 70 calories, including 14 grams of net carbs, 3 grams of protein, and a half gram of fat. Otherwise, swap out the Panko for ground pork rind breadcrumbs. Pork rind bread crumbs have zero carbs and are totally gluten-free. Lastly use almond meal instead of panko. All are great low-carb options but may have an overall effect on the flavor and crispness of the end result.
