    This coffee rub recipe can be altered to suit your needs, but the key ingredient in the spice rub is fresh ground coffee.

    • Coarse Salt: Coarse salt is more than just a seasoning; it's a tenderizer. Salt helps to draw out moisture from the meat and break down its muscle fibers, salt helps ensure a juicy and flavorful result.
    • Fresh Ground Coffee: Coffee might seem like an unusual addition to a dry rub, but its rich, earthy notes complement the beefiness of brisket beautifully. Opt for fresh ground coffee to maximize the depth of flavor.
    • Garlic Powder: Garlic adds depth and complexity to the rub, infusing the brisket with its aromatic essence. The powdered form ensures even distribution throughout the rub.
    • Smoked Paprika: Smoked paprika brings a delightful smokiness, enhancing the barbecue flavor profile. Choose your preferred level of heat—mild, medium, or hot—for the perfect balance.

    Instructions

    Combine all the ingredients in a pint-size mason jar or a small bowl with a lid. Mix with a fork until all of the ingredients are equally distributed and the brown sugar is broken up into small pieces. Store the rub in an airtight container until ready to use.

    Applying the Rub to Brisket

    Before applying the rub, line a medium to large baking sheet with foil. Lay out enough foil to eventually wrap the foil completely around the brisket in a later step. Wearing disposable gloves, trim the excess fat from the brisket properly, and pat dry with paper towels. Place the trimmed brisket on the foil-lined sheet pan. Next, massage the rub onto the meat, covering all surfaces evenly. Wrap tightly in the foil and place the wrapped brisket in the refrigerator for 3-12 hours to marinate. This is a great rub to use when making a Texas-style Smoked Beef Brisket.

    Substitutions

    • Chipotle Chili Powder- Use chili powder or ancho chili powder.
    • Dark Brown Sugar- Use light brown sugar for milder flavor with subtle hints of caramel and molasses.
    • Ground Coriander- Use ground in place of coriander use cumin, however, keep in mind that cumin has a stronger, earthier flavor and you may need to adjust the amount you use.
    • Fresh Ground Coffee- Use instant coffee granules or coffee grounds if fresh ground coffee isn't available.
    • Cayenne- For a spicy flavor profile consider adding a few teaspoons of cayenne pepper to the spice mix to intensify the heat.

    Storage

    The dry rub can be stored in an airtight container in a cool, dark place for up to six months. To preserve its freshness and flavor, make sure to seal the container tightly after each use and avoid exposing it to moisture. Additionally, if you notice any clumping or changes in aroma or color, it may be time to replace the rub with a fresh batch.

    I'm not a fan of coffee flavor. Will the Brisket Coffee Dry Rub make my brisket taste like coffee?

    No, The coffee in the rub adds rich, earthy undertones rather than a pronounced coffee flavor.     Ingredients
      

    • 2 Tbsp. Coarse Salt
    • 3 Tbsp. Fresh Ground Coffee
    • 2 Tbsp. Garlic Powder
    • 1 Tbsp. Smoked Paprika
    • 1 Tbsp. Black Pepper
    • 1 Tbsp. Ground Coriander
    • 1 Tbsp. Onion Powder
    • 1 Tbsp. Chipotle Chili Powder
    • 2 tsp. Ground Mustard
    • ⅓ Cup Dark Brown Sugar

    Instructions
     

    • Grind whole coffee beans in a coffee grinder or blender.
    • Combine all of the ingredients in a glass mason jar or small bowl with a lid.
    • Mix the spice blend well to evenly distribute all of the ingredients.
    • Store with a tight-fitting lid until ready to use. Can be stored for up to 6 months.
